  6. 6. Bring a pot of salted water to a boil.
  7. 7. Cook the beans in it for about 4 minutes.
  8. 8. Immediately shock the beans in cold water to stop the cooking process.
  9. 9. Let the beans drain well.
  10. 10. Cut the avocado in half.

  12. 12. Slice the avocado flesh into thin slices.
  13. 13. Drizzle the avocado slices immediately with lemon juice to prevent browning.
  14. 14. Clean the mushrooms and remove any dirty spots.
  15. 15. Slice the mushrooms thinly.

  22. 22. Whisk mustard, vinegar, orange juice, and 30 milliliters of olive oil in a bowl to make a dressing.

  25. 25. Sear the fish, scallops, and shrimp in it for 2 to 3 minutes.
