🍽️ Fresh Seafood Salad with Beans and Avocado

Ingredients
- 400 g monkfish fillet
- 16 shucked scallops
- 16 shrimp (raw, peeled)
- 200 g Kenya bean
- 1 lemon
- 0.5 lemon (juice)
- 100 g small button mushrooms
- 2 spring onions
- 200 g cherry tomatoes
- 2 handfuls salad mix
- 1 tsp mustard
- 3 tbsp white wine vinegar
- 3 tbsp orange juice
- 50 ml olive oil
- salt
- pepper (from the mill)
- chive curls (for garnish)
Instructions
- 1. Rinse the fish, mussels, and shrimp under running water.
- 2. Pat the seafood dry with a kitchen towel.
- 3. Cut the fish into bite-sized pieces.
- 4. Wash the beans thoroughly.
- 5. Remove the hard ends and strings from the beans.
- 6. Bring a pot of salted water to a boil.
- 7. Cook the beans in it for about 4 minutes.
- 8. Immediately shock the beans in cold water to stop the cooking process.
- 9. Let the beans drain well.
- 10. Cut the avocado in half.
- 11. Remove the pit.
- 12. Slice the avocado flesh into thin slices.
- 13. Drizzle the avocado slices immediately with lemon juice to prevent browning.
- 14. Clean the mushrooms and remove any dirty spots.
- 15. Slice the mushrooms thinly.
- 16. Clean the spring onions.
- 17. Slice the spring onions thinly.
- 18. Wash the tomatoes.
- 19. Halve the tomatoes.
- 20. Wash the salad mix.
- 21. Spin the salad mix dry.
- 22. Whisk mustard, vinegar, orange juice, and 30 milliliters of olive oil in a bowl to make a dressing.
- 23. Season the dressing with salt and pepper.
- 24. Heat the remaining olive oil in a pan.
- 25. Sear the fish, scallops, and shrimp in it for 2 to 3 minutes.
- 26. Season the seafood with salt and pepper.
- 27. Remove the pan from the heat.
- 28. Arrange the salad mix, beans, mushrooms, spring onions, and avocado as a base on the plates.
- 29. Drizzle the vegetables with the dressing.
- 30. Distribute the cooked seafood on top.
- 31. Garnish the salad with chives.
- 32. Serve the salad immediately.
