🍽️ Fresh Seafood and Avocado Salad

Ingredients
- 1 ripe avocado
- 1 untreated lemon (juice)
- 1 red onion
- 2 tbsp olive oil
- 600 g mixed seafood (kitchen-ready, cleaned, e.g. giant prawns, mussels, squid tubes, mini octopuses)
- 80 ml dry white wine
- 2 tbsp freshly chopped parsley
- salt
- pepper (from the mill)
Instructions
- 1. Halve the avocado and remove the pit.
- 2. Scoop out the flesh and cut it into small cubes.
- 3. Drizzle the avocado cubes with a little lemon juice immediately to prevent browning.
- 4. Peel the onion and slice it into thin rings.
- 5. Heat the oil in a frying pan.
- 6. Add the onion rings and seafood to the pan and sauté briefly.
- 7. Deglaze the mixture with white wine.
- 8. Simmer the ingredients for 5 minutes over medium heat.
- 9. Remove the pan from the heat and let the mixture cool down.
- 10. Mix the cooled mixture with the avocado cubes and parsley.
- 11. Season the salad with salt, pepper, and a little lemon juice to taste.
- 12. Plate the salad and serve.
