🍽️ Light Seafood Salad with Citrus Marinade

Ingredients
- 1 kg mussels (washed and cleaned)
- 200 ml white wine
- 1 finely chopped garlic clove
- 1 small green chili pepper
- juice of one orange
- 5 tbsp olive oil
- 300 g cooked, peeled shrimp
- 300 g squid (kitchen-ready)
- juice of one lemon
- 2 tbsp finely chopped herbs (dill, tarragon, chives)
- 10 cherry tomatoes
- salt
- edible flowers (for garnish)
Instructions
- 1. Pour the wine into a pot and bring it to a boil.
- 2. Add the mussels to the boiling wine.
- 3. Cover the pot and cook the mussels for about 5 minutes.
- 4. Shake the pot occasionally while cooking.
- 5. Remove the cooked mussels from the pot.
- 6. Discard any mussels that remain closed after cooking.
- 7. Extract the meat from the opened mussel shells.
- 8. Finely chop the bell pepper.
- 9. Finely chop the garlic.
- 10. Mix the pepper and garlic with the orange juice.
- 11. Add 3 tablespoons of olive oil to the marinade and stir.
- 12. Add the shrimp and squid rings to the marinade.
- 13. Let the seafood marinate for 15 minutes.
- 14. Heat the remaining olive oil in a pan.
- 15. Add the garlic to the hot pan.
- 16. Remove the shrimp and squid rings from the marinade.
- 17. Quickly fry the shrimp and squid rings in the pan.
- 18. Season the seafood with salt.
- 19. Drizzle the seafood with lemon juice.
- 20. Sprinkle the seafood with herbs.
- 21. Let the seasoned seafood cool down slightly.
- 22. Mix the cooled seafood with the mussel meat.
- 23. Cover the bowl with the salad mixture.
- 24. Place the bowl in the refrigerator.
- 25. Let the salad chill for about 1 hour.
- 26. Serve the finished salad with the tomatoes.
