Ingredients
- 0.5 leek stalk
- 1 stalk celery
- 200 g small potatoes
- 1 clove garlic
- 4 tomatoes
- 2 ears of corn
- 2 tbsp butter
- 1 olive oil
- 1 tsp grated lemon zest
- 1 tbsp dried thyme
- 2 tbsp tomato paste
- 800 ml fish broth
- 3 tbsp lemon juice
- 200 ml tomato juice
- 400 g red shrimp
- 200 g shrimp (kitchen-ready and deveined)
- 250 g coarse frying sausage
- salt
- pepper
Instructions
- 1. Wash the leek thoroughly.
- 2. Remove the green tops from the leek.
- 3. Cut the leek into small cubes.
- 4. Wash the celery stalks.
- 5. Dice the celery finely.
- 6. Wash the potatoes.
- 7. Cut the potatoes into large chunks.
- 8. Finely chop the garlic.
- 9. Wash the tomatoes.
- 10. Cut the tomatoes into large pieces.
- 11. Clean the corn cobs.
- 12. Slice the corn into approximately 2-centimeter thick rounds.
- 13. Melt the butter with the oil in a large pot.
- 14. Add the leek, celery, and garlic.
- 15. Sauté the vegetables briefly.
- 16. Add the lemon zest, thyme, and tomato paste.
- 17. Fry everything for a short time.
- 18. Deglaze with fish stock.
- 19. Pour in the lemon juice.
- 20. Pour in the tomato juice.
- 21. Add the corn and potatoes.
- 22. Let the stew simmer for about 15 minutes.
- 23. Wash the red shrimp (red crab).
- 24. Pat the red shrimp dry.
- 25. Chop the red shrimp roughly.
- 26. Slice the sausage.
- 27. Add the sausage and red shrimp to the stew.
- 28. Add the shrimp to the stew.
- 29. Simmer everything for another 5 to 10 minutes.
- 30. Season with salt and pepper.
- 31. Serve the dish.
