🍽️ Seafood Pizza

Ingredients
- 200 g seafood mix (frozen)
- 200 g spelt whole wheat flour
- 200 g spelt flour (Type 630)
- salt
- 0.5 cube yeast
- 1 small organic orange
- 1 clove garlic
- 200 g strained tomatoes
- 2 tbsp tomato paste
- pepper
- chili powder
- 1 bulb fennel
- 40 g dried tomatoes (in oil)
- 250 g mozzarella
Instructions
- 1. Thaw the frozen seafood according to the instructions on the package.
- 2. Mix the flours with half a teaspoon of salt in a bowl.
- 3. Make a well in the center of the flour mixture.
- 4. Crumble the yeast into the well.
- 5. Pour 250 milliliters of lukewarm water over it.
- 6. Knead everything into a smooth dough using the dough hooks of a hand mixer.
- 7. Cover the dough and let it rise in a warm place for about 30 minutes.
- 8. Wash the orange thoroughly with hot water and dry it.
- 9. Finely grate the orange peel.
- 10. Peel the garlic and chop it finely.
- 11. Stir the puréed tomatoes with the tomato paste.
- 12. Fold in the orange peel and the garlic.
- 13. Season the sauce to taste with salt, pepper, and chili powder.
- 14. Clean the fennel and wash it.
- 15. Cut the fennel into small cubes.
- 16. Drain the tomatoes.
- 17. Cut the tomatoes into strips.
- 18. Drain the mozzarella.
- 19. Slice the mozzarella.
- 20. Rinse the thawed seafood under cold water.
- 21. Let the seafood drain.
- 22. Pat the seafood dry thoroughly.
- 23. Divide the pizza dough into eight portions on a floured work surface.
- 24. Roll each portion into a circle about 12 centimeters in diameter.
- 25. Line two baking sheets with baking paper.
- 26. Place four pizzas on each baking sheet.
- 27. Spread the tomato sauce over the pizzas.
- 28. Distribute the seafood, fennel, and tomato strips on top.
- 29. Top the pizzas with the mozzarella slices.
- 30. Preheat the oven to 225 degrees (convection: 200 degrees, gas: level 3-4).
- 31. Bake the pizzas on the lowest rack for 15 to 20 minutes.
- 32. Remove the pizzas from the oven.
- 33. Lift the pizzas off the sheets along with the baking paper.
