  2. 2. Mix the flours with half a teaspoon of salt in a bowl.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Crumble the yeast into the well.
  5. 5. Pour 250 milliliters of lukewarm water over it.
  6. 6. Knead everything into a smooth dough using the dough hooks of a hand mixer.
  7. 7. Cover the dough and let it rise in a warm place for about 30 minutes.
  8. 8. Wash the orange thoroughly with hot water and dry it.
  9. 9. Finely grate the orange peel.
  10. 10. Peel the garlic and chop it finely.
  11. 11. Stir the puréed tomatoes with the tomato paste.
  12. 12. Fold in the orange peel and the garlic.
  13. 13. Season the sauce to taste with salt, pepper, and chili powder.
  14. 14. Clean the fennel and wash it.
  15. 15. Cut the fennel into small cubes.
  16. 16. Drain the tomatoes.
  17. 17. Cut the tomatoes into strips.
  18. 18. Drain the mozzarella.
  19. 19. Slice the mozzarella.
  20. 20. Rinse the thawed seafood under cold water.
  21. 21. Let the seafood drain.
  22. 22. Pat the seafood dry thoroughly.
  23. 23. Divide the pizza dough into eight portions on a floured work surface.
  24. 24. Roll each portion into a circle about 12 centimeters in diameter.
  25. 25. Line two baking sheets with baking paper.
  26. 26. Place four pizzas on each baking sheet.
  27. 27. Spread the tomato sauce over the pizzas.
  28. 28. Distribute the seafood, fennel, and tomato strips on top.
  29. 29. Top the pizzas with the mozzarella slices.
  30. 30. Preheat the oven to 225 degrees (convection: 200 degrees, gas: level 3-4).
  31. 31. Bake the pizzas on the lowest rack for 15 to 20 minutes.
  32. 32. Remove the pizzas from the oven.
  33. 33. Lift the pizzas off the sheets along with the baking paper.
