🍽️ Quick Seafood and Vegetable Stir-Fry

Ingredients
- 250 g seafood mix (frozen)
- 70 g leek (1 small stalk)
- salt
- 100 g bean sprouts
- 50 g baby corn (from can; drained weight)
- 50 g snow peas
- 100 g baby pak choi
- 1 clove of garlic
- 1 red chili pepper
- 1 tsp sunflower oil
- 3 tbsp light soy sauce
- 100 ml classic vegetable broth
Instructions
- 1. Let the frozen seafood thaw in a bowl according to the package instructions.
- 2. Wash the leek, halve it lengthwise, and cut it into strips about 1 cm wide.
- 3. Bring salted water to a boil in a pot.
- 4. Cook the leek and the sprouts one after the other in the boiling water for 1 minute.
- 5. Drain the vegetables, rinse them under cold water, and let them drain well.
- 6. Drain the baby corn and cut it in half lengthwise.
- 7. Wash the snow peas, trim the ends, and cut them in half crosswise.
- 8. Clean the baby pak choi, wash it, halve it, and cut it into wide strips.
- 9. Peel the garlic and dice it finely.
- 10. Wash the chili pepper, halve it, remove the seeds, and chop it very finely.
- 11. Rinse the thawed seafood under cold water, let them drain, and pat them dry all around with kitchen paper.
- 12. Heat the oil in a wok or a large frying pan until very hot.
- 13. Fry the garlic and the chili, stirring constantly, for 1 minute.
- 14. Add the seafood and fry, stirring constantly, for another 5 minutes.
- 15. Add the snow peas, corn, baby pak choi, and leek to the seafood.
- 16. Fry everything for another 3 minutes, stirring constantly.
- 17. Fold the sprins into the pan at the end.
- 18. Add the soy sauce and the broth to the pan.
- 19. Let the mixture come to a vigorous boil once.
- 20. Season the pan with salt and serve.
