🍽️ Juicy Lamb Fillet with Lemon-Garlic Glaze

Ingredients
- 800 g lamb loin fillet
- sea salt
- pepper
- 2 tbsp olive oil
- 1 clove garlic
- 1 organic lemon
- 100 g pitted black olives
- 1 handful mint
Instructions
- 1. Rinse the lamb fillet under cold running water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Season the fillet generously with salt and pepper.
- 4. Heat one tablespoon of oil in a frying pan.
- 5. Sear the lamb fillet on all sides until it has a brown crust.
- 6. Remove the meat from the pan.
- 7. Place the fillet on a baking sheet lined with baking paper.
- 8. Peel the garlic cloves and chop them finely.
- 9. Mix the chopped garlic with the remaining oil.
- 10. Wash the lemon thoroughly with hot water and pat it dry.
- 11. Grate the lemon peel into fine zest.
- 12. Squeeze the juice from half a lemon.
- 13. Combine the lemon zest and lemon juice with the garlic-oil mixture.
- 14. Brush the lamb fillet thoroughly with this marinade.
- 15. Preheat the oven to 120 degrees Celsius (convection 100 degrees Celsius or gas mark 1-2).
- 16. Cook the meat in the oven for 15 to 25 minutes.
- 17. Remove the tray from the oven.
- 18. Let the meat rest for a short time.
- 19. Slice the fillet diagonally into thin slices.
- 20. Place the meat slices on the plates.
- 21. Distribute the olives over the meat.
- 22. Wash the mint leaves and shake them dry.
- 23. Garnish the finished dish with the fresh mint leaves.
