Ingredients
- 2 small zucchini
- 1 small eggplant
- 1 yellow bell pepper
- 1 red bell pepper
- 3 tomatoes
- 1 onion
- 1 garlic clove
- 4 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut off the hard ends of the zucchini.
- 3. Slice the zucchini into round pieces.
- 4. Wash the eggplant.
- 5. Cut the eggplant lengthwise into four long strips.
- 6. Slice the eggplant strips.
- 7. Remove the stem and seeds from the bell pepper.
- 8. Wash the bell pepper.
- 9. Dice the bell pepper into small cubes.
- 10. Wash the tomatoes.
- 11. Cut the tomatoes into cubes.
- 12. Peel the onion.
- 13. Peel the garlic.
- 14. Dice the onion into small cubes.
- 15. Dice the garlic into small cubes.
- 16. Heat olive oil in a frying pan over medium heat.
- 17. Fry the garlic, onions, and bell pepper cubes in the pan.
- 18. Turn the vegetables occasionally.
- 19. Fry the vegetables for about 5 minutes over medium heat.
- 20. Add the zucchini slices to the pan.
- 21. Add the eggplant slices to the pan.
- 22. Fry the vegetables for another 5 to 7 minutes.
- 23. Season everything with salt.
- 24. Season everything with pepper.
- 25. Add the tomato cubes to the pan.
- 26. Cook the vegetables for 2 to 3 minutes until done.
