🍽️ Crispy Chicken with Citrus and Thyme

Ingredients
- 2 garlic bulbs
- 2 unpeeled lemons
- 2 unpeeled limes
- 5 thyme sprigs
- 1 large chicken (approx. 1,2 kg, without innards)
- salt
- pepper (from the mill)
- olive oil
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Thoroughly wash the garlic bulbs.
- 3. Cut the garlic bulbs in half crosswise.
- 4. Wash the lemons and limes.
- 5. Cut the lemons and limes in half as well.
- 6. Wash the thyme sprigs.
- 7. Pat the thyme sprigs dry with a kitchen towel.
- 8. Wash the chicken both inside and out.
- 9. Pat the chicken completely dry with a kitchen towel.
- 10. Make cuts in the chicken as needed to prepare it for cooking.
- 11. Rub the chicken inside and out with salt and pepper.
- 12. Brush the chicken lightly with a little olive oil.
- 13. Place the chicken in a lightly oiled roasting pan.
- 14. Add the halved garlic bulbs to the roasting pan.
- 15. Add the halved lemons to the roasting pan.
- 16. Add the halved limes to the roasting pan.
- 17. Place the dry thyme sprigs on top of the chicken.
- 18. Place the roasting pan in the preheated oven.
- 19. Roast the chicken for 60 to 80 minutes until crispy.
- 20. Brush the chicken with olive oil repeatedly during the roasting time.
