  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Thoroughly wash the garlic bulbs.
  3. 3. Cut the garlic bulbs in half crosswise.
  4. 4. Wash the lemons and limes.
  5. 5. Cut the lemons and limes in half as well.
  6. 6. Wash the thyme sprigs.
  7. 7. Pat the thyme sprigs dry with a kitchen towel.
  8. 8. Wash the chicken both inside and out.
  9. 9. Pat the chicken completely dry with a kitchen towel.
  10. 10. Make cuts in the chicken as needed to prepare it for cooking.
  11. 11. Rub the chicken inside and out with salt and pepper.
  12. 12. Brush the chicken lightly with a little olive oil.
  13. 13. Place the chicken in a lightly oiled roasting pan.
  14. 14. Add the halved garlic bulbs to the roasting pan.
  15. 15. Add the halved lemons to the roasting pan.
  16. 16. Add the halved limes to the roasting pan.
  17. 17. Place the dry thyme sprigs on top of the chicken.
  18. 18. Place the roasting pan in the preheated oven.
  19. 19. Roast the chicken for 60 to 80 minutes until crispy.
  20. 20. Brush the chicken with olive oil repeatedly during the roasting time.
