🍽️ Fresh Mediterranean Zucchini Salad

Ingredients
- 2 large zucchini
- 350 g tomatoes
- 1 bunch spring onions
- 1 bunch basil
- 80 g small black olives
- 150 g feta cheese
- 2 tbsp balsamic vinegar
- 6 tbsp olive oil
- salt
- pepper
Instructions
- 1. Wash the zucchini thoroughly and cut off the hard ends.
- 2. Slice the zucchini into long, thin strips using a vegetable peeler.
- 3. Place the zucchini strips in boiling salted water for 3 minutes.
- 4. Rinse the zucchini immediately under cold water to stop the cooking process.
- 5. Let the zucchini drain well in a colander.
- 6. Wash the tomatoes and cut them into quarters.
- 7. Dice the tomatoes finely.
- 8. Peel the onions and wash them.
- 9. Cut off the ends of the onions.
- 10. Slice the green part of the onion into fine rings.
- 11. Place the zucchini, tomatoes, and onion rings into a large bowl.
- 12. Add some olive oil to the ingredients and mix everything lightly.
- 13. Whisk vinegar, salt, oil, and pepper in a small bowl to make the marinade.
- 14. Pour the marinade over the salad.
- 15. Crumble the feta cheese over the salad with your hands.
- 16. Pluck the leaves off the basil stems.
- 17. Sprinkle the basil leaves over the salad as a final touch.
