🍽️ Fruity Wheat Salad with Artichokes

Ingredients
- 8 medium-sized artichokes
- 1 lemon (juice)
- 2 garlic cloves
- 1 red onion
- 5 tbsp olive oil
- salt
- pepper (from the mill)
- 250 g fine wheat
- 600 ml vegetable broth
- 2 stalks celery
- 2 tbsp apple cider vinegar
- 2 tbsp freshly chopped thyme
- 1 pinch sugar
- 100 g black olives (pitted to taste)
Instructions
- 1. Remove the tough outer leaves of the artichokes and wash them thoroughly.
- 2. Cut off the stem, peel it, and halve the artichokes.
- 3. Remove the fuzzy choke from the inside, if present.
- 4. Drizzle the artichoke halves with a little lemon juice immediately to prevent them from browning.
- 5. Lightly press the unpeeled garlic cloves with the flat of your hand.
- 6. Peel the onion and cut it into small cubes.
- 7. Heat two to three tablespoons of olive oil in a large pan.
- 8. Place the artichokes in the hot oil.
- 9. Add the pressed garlic cloves.
- 10. Season with salt and pepper.
- 11. Deglaze the mixture with about 125 milliliters of water.
- 12. Cover the pan and simmer the vegetables for ten to fifteen minutes over medium heat.
- 13. Add the onion cubes five minutes before the end of the cooking time.
- 14. Let the vegetables cool down slightly uncovered after cooking.
- 15. Cook the fine wheat grains gently in covered broth for about ten minutes.
- 16. Add a little more broth if necessary until the wheat is soft.
- 17. Let the fine wheat cool down to lukewarm.
- 18. Wash and clean the celery.
- 19. Slice the celery into thin slices.
- 20. Whisk the remaining oil with two tablespoons of lemon juice, the vinegar, and the thyme for the dressing.
- 21. Season the dressing with sugar, salt, and pepper to taste.
- 22. Mix all prepared ingredients with the olives into the dressing.
- 23. Let the salad marinate for about fifteen minutes.
- 24. Taste the salad again and adjust seasoning.
- 25. Plate the salad and serve.
