  1. 1. Remove the tough outer leaves of the artichokes and wash them thoroughly.
  2. 2. Cut off the stem, peel it, and halve the artichokes.
  3. 3. Remove the fuzzy choke from the inside, if present.
  4. 4. Drizzle the artichoke halves with a little lemon juice immediately to prevent them from browning.
  5. 5. Lightly press the unpeeled garlic cloves with the flat of your hand.
  6. 6. Peel the onion and cut it into small cubes.
  7. 7. Heat two to three tablespoons of olive oil in a large pan.
  8. 8. Place the artichokes in the hot oil.
  9. 9. Add the pressed garlic cloves.
  10. 10. Season with salt and pepper.
  11. 11. Deglaze the mixture with about 125 milliliters of water.
  12. 12. Cover the pan and simmer the vegetables for ten to fifteen minutes over medium heat.
  13. 13. Add the onion cubes five minutes before the end of the cooking time.
  14. 14. Let the vegetables cool down slightly uncovered after cooking.
  15. 15. Cook the fine wheat grains gently in covered broth for about ten minutes.
  16. 16. Add a little more broth if necessary until the wheat is soft.
  17. 17. Let the fine wheat cool down to lukewarm.
  18. 18. Wash and clean the celery.
  19. 19. Slice the celery into thin slices.
  20. 20. Whisk the remaining oil with two tablespoons of lemon juice, the vinegar, and the thyme for the dressing.
  21. 21. Season the dressing with sugar, salt, and pepper to taste.
  22. 22. Mix all prepared ingredients with the olives into the dressing.
  23. 23. Let the salad marinate for about fifteen minutes.
  24. 24. Taste the salad again and adjust seasoning.
  25. 25. Plate the salad and serve.
