🍝 Pasta Salad with Mediterranean Flavour

Ingredients
- 400 g Spaghetti
- Salt
- 4 tbsp Olive oil
- 2 Onions
- 3 Garlic cloves
- 2 Zucchini
- 400 g Spinach
- Pepper (from the mill)
- 100 g Tomatoes (dried, preserved in oil)
- 40 g Pine nuts
- 50 g Parmesan
- 2 tbsp chopped parsley
- 1 tbsp finely chopped basil
- 4 tbsp Olive oil
- 8 tbsp Ketchup
- 4 tbsp Tomato paste
- 4 tbsp White wine vinegar
- Salt
- Pepper (from the mill)
Instructions
- 1. Cook the pasta in plenty of salted boiling water until firm to the bite.
- 2. Drain the pasta and rinse it briefly with cold water.
- 3. Let the pasta drain well.
- 4. Mix the pasta with one teaspoon of olive oil.
- 5. Cut the pasta into pieces about 6 centimeters long.
- 6. Peel the onions and garlic.
- 7. Chop the onions and garlic finely.
- 8. Wash the zucchini.
- 9. Cut the zucchini in half lengthwise.
- 10. Slice the zucchini halves crosswise.
- 11. Wash the spinach.
- 12. Remove any tough stems from the spinach.
- 13. Spin the spinach dry.
- 14. Heat the remaining olive oil in a pan.
- 15. Sauté the onions and garlic in it until translucent (clear and soft).
- 16. Add the zucchini to the pan.
- 17. Fry the zucchini on both sides until golden yellow.
- 18. Season the zucchini with salt and pepper.
- 19. Drain the sun-dried tomatoes.
- 20. Pat the sun-dried tomatoes dry with kitchen paper.
- 21. Cut the sun-dried tomatoes into fine cubes.
- 22. Toast the pine nuts in a pan without additional fat.
- 23. Grate the Parmesan into large shavings.
- 24. Whisk together the olive oil, ketchup, tomato paste, vinegar, salt, and pepper to make the dressing.
- 25. Stir the herbs into the dressing.
- 26. Taste the dressing and adjust seasoning if needed.
- 27. Mix the salad ingredients (except for the pine nuts and Parmesan) with the dressing.
- 28. Let the salad marinate for about 1 hour to allow the flavors to meld.
- 29. Garnish the salad with the pine nuts and Parmesan before serving.
