🍝 Tasty Pasta Salad with Mediterranean Flavors

Ingredients
- Olives (60 g each black and green)
- 75 g pickled chili peppers
- 2 garlic cloves
- 1 red bell pepper
- 1 bunch parsley
- 350 g penne
- salt
- 5 tbsp olive oil
- 3 tbsp orange juice
- 3 tbsp white wine vinegar
- 2 anchovy fillets
- pepper (from the mill)
- 1 pinch cumin
- 200 g feta
Instructions
- 1. Cook the pasta in plenty of salted water until al dente.
- 2. Whisk oil, orange juice, and vinegar together in a small bowl.
- 3. Press the garlic directly into the liquid using a garlic press.
- 4. Finely chop the anchovy fillets and one chili pepper.
- 5. Stir the anchovies and chili into the dressing.
- 6. Season the sauce generously with salt, pepper, and cumin.
- 7. Cut the feta cheese into small pieces or crumble it.
- 8. Dice the bell pepper.
- 9. Drain the pasta and let it drip dry.
- 10. Toss the hot pasta in a large bowl with the dressing.
- 11. Fold in the cheese, bell pepper cubes, drained olives, and chili.
- 12. Cut the parsley leaves into fine strips and add them.
- 13. Serve the salad lukewarm.
- 14. Taste and adjust seasoning before serving.
