🍝 Fresh Pasta Salad with Mediterranean Flair

Ingredients
- 250 g spiral pasta
- 150 g mushrooms
- 1 shallot
- 2 garlic cloves
- 1 green bell pepper
- 250 g cherry tomatoes
- 250 g mozzarella
- 80 g black olives
- 2 tbsp canned corn
- salt
- pepper (from the mill)
- 1 tbsp butter
- 3 tbsp red wine vinegar
- 5 tbsp olive oil
- 0.5 tsp mustard
- salt

- 50 g sour cream
- 2 tbsp basil (finely chopped)
Instructions
- 1. Boil water in a pot and add salt.
- 2. Cook the pasta in it until it is al dente.
- 3. Drain the pasta and rinse it with cold water.
- 4. Let the pasta drain well.
- 5. Clean the mushrooms and slice them.
- 6. Halve the bell pepper and remove the core.
- 7. Wash the bell pepper and cut it into small cubes.
- 8. Peel the shallot and the garlic.
- 9. Finely chop the shallot and garlic.
- 10. Heat butter in a pan.
- 11. Sauté the shallot and garlic in it until translucent.
- 12. Add the mushroom slices and fry them briefly.
- 13. Season the mushrooms with salt and pepper.
- 14. Remove the mushrooms from the pan and set them aside.
- 15. Wash the tomatoes.
- 16. Halve the tomatoes.
- 17. Drain the mozzarella.
- 18. Cut the mozzarella into cubes.
- 19. Whisk vinegar, mustard, salt, and pepper in a bowl.
- 20. Stir sour cream and oil into the dressing mixture.
- 21. Finally, taste the dressing.
- 22. Mix the dressing with the pasta, mushrooms, bell pepper, tomatoes, mozzarella, olives, corn, and basil.
- 23. Serve the salad.
