🍽️ Oven Cod with Mediterranean Vegetables

Ingredients
- 400 g thick cod fillet
- salt
- pepper
- 2 tbsp lemon juice
- 250 g cherry tomatoes
- 80 g black olives
- 1 onion
- 1 clove garlic
- 150 ml vegetable broth
- 1 tbsp white wine vinegar
- 2 tbsp olive oil
- 200 g large, cooked potatoes (2 large, cooked potatoes)
- 250 g broccoli
Instructions
- 1. Preheat the oven to 200 degrees (convection: 180 degrees, gas: setting 3).
- 2. Peel the onion and cut it into thin strips.
- 3. Heat one tablespoon of olive oil in a pan and sauté the onion strips until translucent.
- 4. Peel the garlic and chop it finely.
- 5. Add the chopped garlic to the onions and sauté briefly.
- 6. Transfer the onion and garlic mixture along with the remaining olive oil into a baking dish.
- 7. Wash the tomatoes and cut them in half.
- 8. Use a cookie cutter to cut small balls out of the potatoes.
- 9. Rinse the cod and pat it dry with a kitchen towel.
- 10. Divide the fish into suitable portion pieces.
- 11. Season the fish pieces with salt and pepper.
- 12. Drizzle the fish with lemon juice.
- 13. Place the fish pieces into the prepared baking dish.
- 14. Add the potato balls, the halved tomatoes, and the olives to the dish.
- 15. Pour vegetable broth and white wine vinegar over the vegetables.
- 16. Cover the baking dish.
- 17. Place the dish in the oven and bake the fish for about 20 minutes.
- 18. Divide the broccoli into small florets.
- 19. Boil the broccoli florets for 5 minutes in boiling salted water (this is called blanching).
- 20. Lift the broccoli out of the water and arrange it on top of the finished fish.
