🥗 Fresh Pasta Salad with Feta and Tomatoes

Ingredients
- 350 g whole wheat pasta (bow ties)
- 300 g dried tomatoes in oil (drained weight)
- 300 g feta (in brine)
- 0.5 bunch basil
- pepper
- 0.5 tsp paprika powder
- 3 tbsp white balsamic vinegar
Instructions
- 1. Boil plenty of water in a pot and add plenty of salt.
- 2. Cook the bow-tie pasta in it until al dente (firm to the bite).
- 3. Drain the pasta and rinse it immediately with very cold water so it does not continue cooking.
- 4. Let the pasta drain well and let it cool down completely.
- 5. Cut the tomatoes into thin strips.
- 6. Drain the feta cheese and cut it into small cubes.
- 7. Add the tomato strips and the feta cubes to the cooled pasta.
- 8. Wash the basil and shake it dry.
- 9. Cut the basil into thin strips.
- 10. Mix vinegar, pepper, and paprika powder in a small bowl.
- 11. Pour the vinegar mixture over the pasta salad.
- 12. Mix everything well together.
- 13. Let the salad sit for approx. 30 minutes so the flavors can infuse.
- 14. Season the salad with salt and other spices as needed.
- 15. Reserve the cut basil strips and stir them into the salad.
- 16. Serve the finished salad on plates.
