🍽️ Fresh Couscous Salad with Snow Peas and Feta

Ingredients
- 300 g Couscous (from the package)
- 1 red bell pepper
- 100 g green snow peas
- 200 g soft feta cheese
- 100 g black olives
- salt
- pepper from the mill
- 1 clove of garlic
- juice of one lemon
- 4 tbsp olive oil
Instructions
- 1. Cook the couscous according to the package instructions.
- 2. Wash the bell peppers thoroughly.
- 3. Halve the bell peppers and remove the seeds.
- 4. Cut the pepper flesh into small cubes.
- 5. Wash the snow peas.
- 6. Put the snow peas in boiling salted water for 4 minutes (this is called blanching).
- 7. Immediately shock the snow peas with cold water to stop the cooking process.
- 8. Let the snow peas drain well.
- 9. Cut the snow peas in half lengthwise.
- 10. Peel the garlic clove.
- 11. Mince the garlic very finely.
- 12. Mix oil, lemon juice, the minced garlic, salt, and pepper to make a vinaigrette.
- 13. Combine the cooked couscous, the pepper cubes, the olives, and the snow peas in a bowl.
- 14. Pour the vinaigrette over the salad mixture.
- 15. Toss everything well until the ingredients are evenly coated.
- 16. Taste the salad and add more salt and pepper if necessary.
- 17. Portion the salad into takeaway containers.
- 18. Crumble the feta cheese over each individual salad.
