Ingredients
- 4 chicken drumsticks
- 4 tbsp olive oil
- 6 tomatoes
- 4 garlic cloves
- 40 g black olives
- 2 rosemary sprigs
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the chicken thighs under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Brush the thighs lightly with olive oil.
- 4. Season the meat evenly with salt and pepper.
- 5. Place the chicken thighs in a roasting pan.
- 6. Preheat the oven to 200 degrees Celsius.
- 7. Roast the thighs in the preheated oven for 30 minutes.
- 8. Turn the chicken thighs after 15 minutes of cooking time.
- 9. Pour a cup of salted water into the roasting pan.
- 10. Spoon the cooking juices over the meat occasionally during the remaining time.
- 11. Blanch the tomatoes briefly with boiling water.
- 12. Shock the tomatoes immediately with cold water.
- 13. Peel the skin off the tomatoes.
- 14. Cut the tomatoes into quarters.
- 15. Remove the seeds from the tomato pieces.
- 16. Peel the garlic cloves.
- 17. Finely chop the garlic.
- 18. Rinse the rosemary sprigs under running water.
- 19. Shake the rosemary sprigs dry.
- 20. Break the rosemary sprigs into smaller pieces.
- 21. Add the prepared tomatoes to the chicken thighs.
- 22. Add the chopped garlic.
- 23. Add the olives to the pan.
- 24. Add the rosemary to the pan.
- 25. Reduce the oven temperature to 180 degrees Celsius.
- 26. Finish cooking the dish for another 10 minutes.
