🍽️ Mediterranean Frittata

Ingredients
- 6 eggs
- 50 ml whipping cream
- 2 tbsp crème fraîche
- 400 g spinach
- 1 clove of garlic (finely chopped)
- salt
- pepper (from the mill)
- nutmeg (ground)
- 50 g black olives (pitted and roughly chopped)
- 1 tbsp olive oil
- 100 g feta
Instructions
- 1. Wash the spinach thoroughly.
- 2. Remove thick stems and any damaged leaves.
- 3. Bring a small amount of water to a boil with salt.
- 4. Add the wet spinach to the boiling water.
- 5. Let the spinach wilt briefly (this is called blanching).
- 6. Drain the spinach and let it drip dry.
- 7. Squeeze the spinach firmly to remove excess liquid.
- 8. Chop the spinach into coarse pieces.
- 9. Whisk the eggs in a bowl.
- 10. Stir in the cream and the crème fraîche.
- 11. Season the mixture with salt, pepper, and ground nutmeg.
- 12. Heat oil in a frying pan.
- 13. Sauté the chopped spinach and garlic in the hot oil.
- 14. Pour the egg-cream mixture over the spinach.
- 15. Crumble the feta cheese over the frittata.
- 16. Distribute the olives evenly on top.
- 17. Cover the pan.
- 18. Let the frittata set over low heat for 5 to 6 minutes.
- 19. Carefully turn the frittata out onto a plate.
- 20. Serve the dish immediately.
