  3. 3. Bring a small amount of water to a boil with salt.
  4. 4. Add the wet spinach to the boiling water.
  5. 5. Let the spinach wilt briefly (this is called blanching).
  6. 6. Drain the spinach and let it drip dry.
  7. 7. Squeeze the spinach firmly to remove excess liquid.
  8. 8. Chop the spinach into coarse pieces.
  9. 9. Whisk the eggs in a bowl.
  10. 10. Stir in the cream and the crème fraîche.
  11. 11. Season the mixture with salt, pepper, and ground nutmeg.
  12. 12. Heat oil in a frying pan.
  13. 13. Sauté the chopped spinach and garlic in the hot oil.
  14. 14. Pour the egg-cream mixture over the spinach.
  15. 15. Crumble the feta cheese over the frittata.
  16. 16. Distribute the olives evenly on top.
  17. 17. Cover the pan.
  18. 18. Let the frittata set over low heat for 5 to 6 minutes.
  19. 19. Carefully turn the frittata out onto a plate.
  20. 20. Serve the dish immediately.
