🍽️ Juicy Mediterranean Meatballs

Ingredients
- 600 g minced meat
- 1 bread roll (from the previous day)
- 1 egg
- 1 onion
- 2 garlic cloves
- 1 bunch basil
- 200 g mozzarella
- 250 g tomatoes
- 5 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Soak the breadcrumbs (dried bread) in lukewarm water.
- 2. Squeeze the soaked breadcrumbs well with your hands so that only little moisture remains.
- 3. Add the squeezed breadcrumbs to a bowl with the minced meat.
- 4. Add an egg, salt, and pepper.
- 5. Peel the onion and the garlic.
- 6. Chop the onion and garlic very finely.
- 7. Rinse the fresh basil leaves under running water.
- 8. Pluck the leaves off the stems.
- 9. Save a few nice basil leaves for decoration at the end.
- 10. Finely chop the rest of the basil.
- 11. Let the mozzarella drain in a sieve.
- 12. Cut the mozzarella into very small cubes.
- 13. Blanch the tomatoes by pouring boiling water over them.
- 14. Shock the tomatoes immediately with cold water to stop the process.
- 15. Peel the skin off the tomatoes.
- 16. Cut the peeled tomatoes into quarters.
- 17. Remove the core (the hard seeds and white flesh) from the tomato quarters.
- 18. Dice the remaining tomato flesh into small cubes.
- 19. Add the tomato cubes, chopped onion, garlic, chopped basil, and mozzarella to the meat mixture.
- 20. Mix all ingredients well with your hands until a homogeneous mass is formed.
- 21. Shape the mixture into small, round meatballs.
- 22. Heat olive oil in a pan.
- 23. Fry the meatballs in the hot oil on all sides until golden brown.
- 24. Cook the meatballs for a total of about 10 minutes.
- 25. Garnish the finished meatballs with the saved basil leaves.
