  4. 4. Heat sunflower oil in a large pan.
  5. 5. Sear the meat on all sides until it has a brown crust.
  6. 6. Deglaze the meat with the meat broth.
  7. 7. Add the thyme sprigs and the peeled garlic clove to the pan.
  8. 8. Cover the pan and braise the meat on low heat for approx. 20 minutes.
  9. 9. Keep the meat slightly pink and juicy during this time.
  10. 10. Rinse the arugula under cold water.
  11. 11. Remove any coarse stems from the arugula.
  12. 12. Tear the arugula into small, bite-sized pieces.
  13. 13. Wash the tomatoes thoroughly.
  14. 14. Pour boiling water over the tomatoes briefly.
  15. 15. Shock the tomatoes immediately with cold water.
  16. 16. Peel the skin off the tomatoes.
  17. 17. Cut the tomatoes into wedges.
  18. 18. Wash the beans thoroughly.
  19. 19. Remove any ends or strings from the beans.
  20. 20. Blanch (briefly cook in boiling water) the beans in salted water for approx. 8 minutes.

  24. 24. Heat olive oil in a small pan.
  25. 25. Add the tomato wedges to the hot oil.
  26. 26. Let the tomatoes melt briefly in the oil.
  27. 27. Remove the pan from the heat.
  28. 28. Add the balsamic vinegar to the tomatoes.
  29. 29. Season the tomato mixture with salt and pepper.
  30. 30. Distribute the arugula onto small plates.
  31. 31. Slice the cooked meat.
  32. 32. Place the meat slices on top of the arugula.
  33. 33. Distribute the seasoned tomatoes over the meat.
  34. 34. Sprinkle the dish with the beans.
