Ingredients
- 2 fresh egg yolks (room temperature!)
- 1 pinch salt
- 1 tsp mustard
- 1 tbsp lemon juice
- 250 ml germ oil
Instructions
- 1. Place the egg yolk, a pinch of salt, the mustard, and one tablespoon of lemon juice into a bowl.
- 2. Whisk the ingredients vigorously using a whisk or the beaters of a hand mixer.
- 3. Now drip a few drops of oil into the mixture very slowly while continuing to stir.
- 4. Then pour the oil in a thin, steady stream.
- 5. Keep stirring constantly until the oil is fully absorbed by the egg yolk mixture.
- 6. Continue until a thick, creamy mayonnaise has formed.
- 7. Finally, season the mayonnaise to taste with salt, pepper, and a little lemon juice.
