Ingredients
- 2 egg yolks
- 1 tsp sharp mustard
- 1 tbsp wine vinegar
- 0.5 tsp paprika powder (mild sweet)
- 250 ml neutral vegetable oil (e.g. sunflower or corn germ oil)

Instructions
- 1. Make sure all ingredients are at room temperature.
- 2. Place the egg yolk, mustard, vinegar, and paprika in a small bowl.
- 3. Whisk the mixture until it is creamy and smooth.
- 4. Slowly drip the oil into the mixture while whisking constantly.
- 5. Add the remaining oil in a thin, steady stream.
- 6. Check if the mayonnaise is glossy and thick-creamy.
- 7. Season the mayonnaise with salt to finish.
- 8. Keep the mayonnaise in the refrigerator until you are ready to serve it.
