  1. 1. Put the flour, three eggs, half a teaspoon of salt, and one tablespoon of soft butter into a bowl.
  2. 2. Knead everything into a smooth and elastic dough.
  3. 3. Cover the bowl and let the dough rest for about twenty minutes.
  4. 4. Soak the bread roll in some water.
  5. 5. Peel one onion and dice it finely.
  6. 6. Sauté the onion in one tablespoon of butter until translucent.
  7. 7. Wash the spinach and remove any tough stems.
  8. 8. Put the wet spinach into a pot with a little boiling salted water.
  9. 9. Let the spinach wilt briefly (this is called blanching).
  10. 10. Drain the spinach, shock it with cold water, and let it drain well.
  11. 11. Squeeze the spinach firmly to remove remaining liquid.
  12. 12. Finely chop the spinach.
  13. 13. Squeeze the soaked bread roll and tear it into small pieces.
  14. 14. Mix the bread roll, spinach, veal mince, marjoram, sautéed onion, parsley, and the remaining egg in a bowl.
  15. 15. Season the filling with salt, pepper, nutmeg, and a little more marjoram.
  16. 16. Finally, taste the filling and adjust seasoning if needed.
  17. 17. Divide the dough into two halves.
  18. 18. Lightly dust your work surface with flour.
  19. 19. Roll out one portion of the dough thinly.
  20. 20. Cut the dough into squares of about twelve by twelve centimeters.
  21. 21. Place one teaspoon of filling onto each dough square.
  22. 22. Fold the dough squares together.
  23. 23. Shape them into triangular Maultaschen.
  24. 24. Press the edges firmly together so they are well sealed.
  25. 25. Put the Maultaschen into boiling salted water.
  26. 26. Let them cook over low heat for about twelve minutes.
  27. 27. Peel the remaining onions.
  28. 28. Slice the onions into rings.
  29. 29. Fry the onion rings in the remaining butter until golden brown.
  30. 30. Let the Maultaschen drain.
  31. 31. Arrange the Maultaschen on plates.
  32. 32. Sprinkle the fried onion rings over them.
  33. 33. Drizzle with a little melted butter and serve the dish.
