🍽️ Classic Swabian Maultaschen

Ingredients
- 300 g flour
- 4 eggs
- salt
- 4 tbsp soft butter
- 0.5 day-old roll
- 4 onions
- 200 g spinach
- 150 g veal mince
- 0.5 tsp dried marjoram
- 1 tbsp chopped parsley
- pepper (from the mill)
- nutmeg
- flour (for the work surface)
- butter (for melting)
Instructions
- 1. Put the flour, three eggs, half a teaspoon of salt, and one tablespoon of soft butter into a bowl.
- 2. Knead everything into a smooth and elastic dough.
- 3. Cover the bowl and let the dough rest for about twenty minutes.
- 4. Soak the bread roll in some water.
- 5. Peel one onion and dice it finely.
- 6. Sauté the onion in one tablespoon of butter until translucent.
- 7. Wash the spinach and remove any tough stems.
- 8. Put the wet spinach into a pot with a little boiling salted water.
- 9. Let the spinach wilt briefly (this is called blanching).
- 10. Drain the spinach, shock it with cold water, and let it drain well.
- 11. Squeeze the spinach firmly to remove remaining liquid.
- 12. Finely chop the spinach.
- 13. Squeeze the soaked bread roll and tear it into small pieces.
- 14. Mix the bread roll, spinach, veal mince, marjoram, sautéed onion, parsley, and the remaining egg in a bowl.
- 15. Season the filling with salt, pepper, nutmeg, and a little more marjoram.
- 16. Finally, taste the filling and adjust seasoning if needed.
- 17. Divide the dough into two halves.
- 18. Lightly dust your work surface with flour.
- 19. Roll out one portion of the dough thinly.
- 20. Cut the dough into squares of about twelve by twelve centimeters.
- 21. Place one teaspoon of filling onto each dough square.
- 22. Fold the dough squares together.
- 23. Shape them into triangular Maultaschen.
- 24. Press the edges firmly together so they are well sealed.
- 25. Put the Maultaschen into boiling salted water.
- 26. Let them cook over low heat for about twelve minutes.
- 27. Peel the remaining onions.
- 28. Slice the onions into rings.
- 29. Fry the onion rings in the remaining butter until golden brown.
- 30. Let the Maultaschen drain.
- 31. Arrange the Maultaschen on plates.
- 32. Sprinkle the fried onion rings over them.
- 33. Drizzle with a little melted butter and serve the dish.
