🍽️ Homemade Maultaschen with crispy onions and salad

Ingredients
- 250 g flour
- 2 eggs
- 1 tsp salt
- 1 tbsp vegetable oil
- 1 small onion
- 2 spring onions
- 200 g spinach
- 1 stale roll
- 60 ml lukewarm milk
- 50 g smoked ham
- 1 tbsp butter
- 150 g sausage meat
- 1 egg
- salt
- pepper (white and freshly ground)
- 1 tbsp dried marjoram
- 1 tbsp chopped parsley
- 1 l broth (for cooking)
- 200 g onions
- flour (for dusting)
- vegetable oil (for frying)
- chives (for sprinkling)
Instructions
- 1. Sift the flour onto a clean work surface.
- 2. Make a well in the center of the flour.
- 3. Add the eggs, salt, and oil into the well.
- 4. Mix the ingredients with a fork.
- 5. Gradually work flour from the edges into the center.
- 6. Knead the dough until smooth with your hands.
- 7. Add a little water if necessary.
- 8. Shape the dough into a ball.
- 9. Wrap the ball in cling film.
- 10. Let the dough rest for 20 minutes.
- 11. Peel the onion and chop it finely.
- 12. Wash the spring onions.
- 13. Slice the spring onions into thin rings.
- 14. Clean the spinach and wash it thoroughly.
- 15. Blanch the spinach briefly in boiling water.
- 16. Shock the spinach in cold water.
- 17. Squeeze the spinach very well to remove excess water.
- 18. Finely chop the spinach leaves.
- 19. Cube the bread roll into small pieces.
- 20. Soak the bread cubes in the lukewarm milk.
- 21. Cut the bacon into cubes.
- 22. Melt the butter in a pan.
- 23. Sauté the onion and spring onions lightly.
- 24. Roll out the pasta dough thinly on a lightly floured surface.
- 25. Divide the dough into two halves.
- 26. Mix the chopped spinach with the onions.
- 27. Add the squeezed bread to the filling.
- 28. Add the bacon to the filling.
- 29. Add the minced meat to the filling.
- 30. Add the eggs to the filling.
- 31. Season the filling with spices.
- 32. Mix all filling ingredients well.
- 33. Place 1 tablespoon of filling on one half of the dough.
- 34. Leave space between the fillings.
- 35. Fold the second half of the dough over.
- 36. Press the edges around the filling well.
- 37. Cut the maultaschen into rectangles.
- 38. Place the maultaschen into the boiling broth.
- 39. Let the maultaschen simmer for approx. 15 minutes over low heat.
- 40. Season the maultaschen with salt and pepper.
- 41. Peel the onions for the garnish.
- 42. Slice the onions into rings.
- 43. Dust the onion rings with flour.
- 44. Fry the onion rings in plenty of oil until golden brown.
- 45. Remove the onions.
- 46. Let the onions drain on kitchen paper.
- 47. Plate the maultaschen with some broth.
- 48. Add the onion rings.
- 49. Sprinkle the maultaschen with freshly chopped chives.
- 50. Serve mixed salad on the side if desired.
