Ingredients
- 200 g spelt flour Type 1050
- 200 g spelt wholemeal flour
- 5 eggs
- salt
- 1 stale wholemeal roll
- 100 ml milk (3.5 % fat)
- 200 g spinach (frozen)
- 500 g beef mince
- 4 tbsp butter
- 2 shallots
- 2 carrots
- 0.5 stalk leek
- pepper
- nutmeg (freshly grated)
- 0.5 bunch chives
Instructions
- 1. Put flour, 3 eggs, about 5 tablespoons of water, and a pinch of salt into a bowl.
- 2. Knead the ingredients into a firm pasta dough.
- 3. Wrap the dough in a damp cloth or cover it.
- 4. Let the dough rest in the refrigerator for 20 minutes.
- 5. Soak the bread rolls in the milk.
- 6. Let the spinach thaw.
- 7. Squeeze the thawed spinach well.
- 8. Chop the spinach roughly.
- 9. Peel the shallots.
- 10. Chop the shallots finely.
- 11. Heat 1 tablespoon of butter in a pan.
- 12. Sauté the finely chopped shallots in the hot butter.
- 13. Squeeze the soaked bread roll.
- 14. Mix the ground beef, the squeezed bread roll, the spinach, and the remaining eggs in a bowl.
- 15. Add the sautéed shallots to the meat mixture.
- 16. Knead everything into a smooth mixture.
- 17. Season the filling generously with salt.
- 18. Season the filling with pepper.
- 19. Season the filling with nutmeg.
- 20. Divide the pasta dough into two parts.
- 21. Roll out the first part of the dough into a large rectangle.
- 22. Make sure the rectangle is about 20 cm wide.
- 23. Roll out the second part of the dough into a large rectangle as well.
- 24. Take one tablespoon of the filling.
- 25. Spread the filling on the lower half of the dough.
- 26. Repeat with more tablespoons of filling.
- 27. Keep a distance of about 6 cm between the fillings.
- 28. Brush the upper half of the dough with water.
- 29. Fold the upper half of the dough over the filling.
- 30. Press the edges firmly.
- 31. Cut the maultaschen into rectangles using a pastry wheel or a knife.
- 32. Bring plenty of salted water to a boil in a large pot.
- 33. Put the maultaschen into the boiling water.
- 34. Let the maultaschen cook over low heat for 15 minutes.
- 35. Peel the carrots.
- 36. Cut the carrots into small cubes.
- 37. Wash the leek.
- 38. Trim the leek.
- 39. Dice the leek finely.
- 40. Cook the vegetable cubes for 1 minute in boiling salted water.
- 41. Shock the vegetables in cold water.
- 42. Let the vegetables drain in a sieve.
- 43. Heat the remaining butter in a pan.
- 44. Put the cooked maultaschen into the pan.
- 45. Add some cooking water.
- 46. Toss the maultaschen in it.
- 47. Add the vegetable cubes.
- 48. Wash the chives.
- 49. Shake the chives dry.
- 50. Cut the chives into small rings.
- 51. Plate the maultaschen with the vegetables.
- 52. Garnish the maultaschen with chives.
