🍽️ Matjes Pot with Apples and Celery

Ingredients
- 6 Onions
- 2 tbsp Oil
- 2 Bay leaves
- 150 ml Red wine
- Salt
- Pepper
- 6 Matjes fillets
- 2 Apples
- 4 stalks Celery
- 300 g Sour cream
- 125 g Double cream
- 4 tbsp Mayonnaise
- 4 tbsp Milk
Instructions
- 1. Peel the onions and slice them into rings.
- 2. Heat the oil in a pot.
- 3. Sauté the onion rings in it for 10 to 15 minutes.
- 4. Add the bay leaf.
- 5. Gradually add the red wine.
- 6. Let the liquid reduce repeatedly.
- 7. Season everything with a little salt and pepper.
- 8. Let the onions cool down.
- 9. Rinse the matjes fillets and pat them dry.
- 10. Cut the matjes into pieces.
- 11. Wash the apples.
- 12. Quarter the apples and remove the core.
- 13. Cut the apples into pieces.
- 14. Rinse the celery.
- 15. Slice the celery.
- 16. Stir the sour cream with creme double, mayonnaise, and milk until smooth.
- 17. Set aside a few onions for garnish.
- 18. Mix in the remaining onions, matjes, apples, and celery.
- 19. Season with salt and pepper to taste.
- 20. Let the dish infuse for one hour.
- 21. Serve garnished with the red wine onions.
