🍽️ Matjes Tartare on Pumpernickel Crust

Ingredients
- 250 g matjes fillets
- 200 g apples
- 1 red onion
- 1 small lemon
- 1 tbsp rapeseed oil
- 1 tbsp grainy mustard
- salt
- pepper
- 3 slices pumpernickel
- 1 box cress
Instructions
- 1. Cut the matjes fillets into very small cubes.
- 2. Wash the apple and dry it thoroughly.
- 3. Cut the apple into quarters and remove the core.
- 4. Cut the apple flesh into fine cubes as well.
- 5. Peel the onion.
- 6. Finely chop the onion.
- 7. Squeeze the lemon to extract the juice.
- 8. Place the lemon juice, matjes, apple, and onion into a bowl.
- 9. Add oil, mustard, salt, and pepper.
- 10. Mix all ingredients thoroughly together.
- 11. Crumble the pumpernickel bread into fine crumbs using your fingers.
- 12. Place a 12-centimeter ring mold on a plate.
- 13. Put half of the pumpernickel crumbs into the ring mold.
- 14. Press the crumbs firmly into the ring.
- 15. Place half of the matjes mixture on top of the pumpernickel base.
- 16. Carefully lift the ring mold straight up and away.
- 17. Repeat the process with the remaining pumpernickel crumbs and matjes mixture.
- 18. Cut the cress from the stem or bed.
- 19. Scatter the cress over the finished tartare.
