  1. 1. Cut the matjes fillets into very small cubes.
  2. 2. Wash the apple and dry it thoroughly.
  3. 3. Cut the apple into quarters and remove the core.
  4. 4. Cut the apple flesh into fine cubes as well.
  5. 5. Peel the onion.
  6. 6. Finely chop the onion.
  7. 7. Squeeze the lemon to extract the juice.
  8. 8. Place the lemon juice, matjes, apple, and onion into a bowl.
  9. 9. Add oil, mustard, salt, and pepper.
  10. 10. Mix all ingredients thoroughly together.
  11. 11. Crumble the pumpernickel bread into fine crumbs using your fingers.
  12. 12. Place a 12-centimeter ring mold on a plate.
  13. 13. Put half of the pumpernickel crumbs into the ring mold.
  14. 14. Press the crumbs firmly into the ring.
  15. 15. Place half of the matjes mixture on top of the pumpernickel base.
  16. 16. Carefully lift the ring mold straight up and away.
  17. 17. Repeat the process with the remaining pumpernickel crumbs and matjes mixture.
  18. 18. Cut the cress from the stem or bed.
  19. 19. Scatter the cress over the finished tartare.
