🍽️ Crispy Matjes Salad with Apples

Ingredients
- 4 slices French country bread
- 3 tbsp Butter
- Salt
- 1 Arugula
- 1 handful Dill
- 2 sprigs red basil
- 1 handful Chervil
- 8 Matjes fillets
- 4 green apples (Granny Smith)
- Pepper (from the mill)
- 2 tbsp Olive oil
Instructions
- 1. Cut the peasant bread into small cubes.
- 2. Heat two tablespoons of butter in a non-stick pan.
- 3. Fry the bread cubes until golden brown.
- 4. Remove the bread cubes from the pan and season them lightly with salt.
- 5. Set the cubed bread aside.
- 6. Wash the arugula thoroughly.
- 7. Shake the arugula dry.
- 8. Wash the fresh herbs.
- 9. Shake the herbs dry.
- 10. Pluck the leaves from the herb stems.
- 11. Mix the herb leaves with the arugula.
- 12. Wash the matjes (smoked herring).
- 13. Pat the matjes dry with kitchen paper.
- 14. Cut the matjes diagonally into thin strips.
- 15. Wash the apples.
- 16. Remove the core from the apples.
- 17. Slice the apples into thin rounds.
- 18. Heat the remaining butter in a non-stick pan.
- 19. Fry the apple slices for two to three minutes.
- 20. Turn the apple slices occasionally while frying.
- 21. Season the apple slices with pepper.
- 22. Arrange the apple slices in a fan shape on the plates.
- 23. Distribute the matjes over the apple slices.
- 24. Add the bread cubes.
- 25. Crown the salad with the herb and arugula mixture.
- 26. Drizzle everything with olive oil.
