🍽️ Matjes Salad with Beans

Ingredients
- 200 g thick beans (frozen)
- salt
- 500 g green beans
- 50 g streaky turkey bacon
- 5 sprigs parsley
- 3 sprigs basil
- 250 g cherry tomatoes
- 4 spring onions
- 400 g matjes fillets (4 matjes fillets)
- 4 tbsp apple cider vinegar
- 3 tbsp classic vegetable broth
- pepper
- 1 tsp sweet mustard
- 3 tbsp rapeseed oil
Instructions
- 1. Put the frozen bean kernels into boiling salted water.
- 2. Cook the kernels for 3 minutes.
- 3. Drain the beans.
- 4. Rinse them under cold running water.
- 5. Let the water drain off.
- 6. Press the kernels out of their skins into a salad bowl.
- 7. Wash the green beans.
- 8. Remove the hard ends.
- 9. Cut the beans in half.
- 10. Cook the green beans in boiling salted water for 10 to 12 minutes.
- 11. Drain the green beans.
- 12. Rinse them under cold running water.
- 13. Let the water drain off.
- 14. Add the green beans to the bean kernels in the bowl.
- 15. Cut the bacon into fine cubes.
- 16. Heat a small non-stick pan.
- 17. Fry the bacon until crispy without adding extra fat.
- 18. Place the bacon on kitchen paper.
- 19. Let the excess fat drain off.
- 20. Set the bacon aside.
- 21. Wash the parsley.
- 22. Wash the savory.
- 23. Shake the herbs dry.
- 24. Pluck the leaves from the stems.
- 25. Chop the herbs roughly.
- 26. Wash the tomatoes.
- 27. Cut the tomatoes into quarters.
- 28. Add the tomatoes and the herbs to the salad bowl.
- 29. Wash the spring onions.
- 30. Shake them dry.
- 31. Remove the root ends.
- 32. Slice the spring onions diagonally into rings.
- 33. Add the spring onions to the rest of the vegetables.
- 34. Rinse the matjes fillets.
- 35. Pat the fillets dry.
- 36. Cut the fillets into pieces about 2 centimeters wide.
- 37. Set the matjes pieces aside.
- 38. Put the apple cider vinegar into a small bowl.
- 39. Add the vegetable broth.
- 40. Add salt and pepper.
- 41. Add the mustard.
- 42. Add the rapeseed oil.
- 43. Whisk everything together to make a dressing.
- 44. Add the matjes pieces to the salad bowl.
- 45. Pour the dressing over the salad.
- 46. Toss the salad gently.
- 47. Sprinkle the salad with the bacon cubes.
- 48. Serve the salad.
