  1. 1. Thoroughly wash the head lettuce leaves under running water.
  2. 2. Dry the lettuce by spinning it in a salad spinner or patting it dry with a kitchen towel.
  3. 3. Separate the large, intact leaves from the rest of the lettuce and set them aside.
  4. 4. Slice the celery into very thin rounds.
  5. 5. Dice the matjes herring into small pieces.
  6. 6. Slice the onion into thin rings.
  7. 7. Finely chop the gherkins.
  8. 8. In a separate bowl, mix the crème fraîche with the cream.
  9. 9. Add the lemon juice, sugar, salt, and pepper to the cream mixture.
  10. 10. Stir the sauce well until the sugar has dissolved.
  11. 11. Gently fold the chopped ingredients (celery, matjes, onions, gherkins) into the cream sauce.
  12. 12. Arrange the large lettuce leaves on four individual plates.
  13. 13. Place the matjes cream mixture on top of the lettuce leaves.
  14. 14. Serve the salad with boiled potatoes on the side if desired.
