  2. 2. Pat the fillets dry with a kitchen towel.
  3. 3. Place two fillets on a plate.
  4. 4. Wash the apples thoroughly.
  5. 5. Cut the apples in half through the middle.
  6. 6. Remove the core from the apple halves.
  7. 7. Cut one apple half into very thin slices.
  8. 8. Cut the remaining apple half into small cubes.
  9. 9. Whisk the vinegar with the honey.
  10. 10. Add the orange juice to the mixture.
  11. 11. Add the lemon juice to the mixture.
  12. 12. Fold the apple cubes into the dressing.
  13. 13. Season the apple dressing mixture with salt.
  14. 14. Distribute the apple dressing mixture over the matjes fillets.
  15. 15. Sprinkle the dish with chives.
  16. 16. Garnish the plate with the apple slices.
  17. 17. Serve the matjes herring immediately.
