🍽️ Matjes Herring with Apple Dressing

Ingredients
- 8 Matjes fillets
- 2 Apples
- 2 tbsp Apple cider vinegar
- 1 tsp Honey
- 2 tbsp Orange juice
- 2 tbsp Lemon juice
- 2 tbsp Chives
- Salt
Instructions
- 1. Rinse the matjes fillets under cold water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Place two fillets on a plate.
- 4. Wash the apples thoroughly.
- 5. Cut the apples in half through the middle.
- 6. Remove the core from the apple halves.
- 7. Cut one apple half into very thin slices.
- 8. Cut the remaining apple half into small cubes.
- 9. Whisk the vinegar with the honey.
- 10. Add the orange juice to the mixture.
- 11. Add the lemon juice to the mixture.
- 12. Fold the apple cubes into the dressing.
- 13. Season the apple dressing mixture with salt.
- 14. Distribute the apple dressing mixture over the matjes fillets.
- 15. Sprinkle the dish with chives.
- 16. Garnish the plate with the apple slices.
- 17. Serve the matjes herring immediately.
