  2. 2. Cut the matjes fillets into bite-sized pieces.
  3. 3. Put vinegar, wine, and sugar into a small saucepan.
  4. 4. Add the bay leaves to the saucepan.
  5. 5. Heat the mixture and stir until the sugar has completely dissolved.
  6. 6. Let the broth cool down completely.
  7. 7. Peel the onion and slice it into thin rings.
  8. 8. Wash the dill and shake off excess water.
  9. 9. Finely chop the dill.
  10. 10. Layer the matjes pieces, onion rings, and dill in a bowl.
  11. 11. Pour the cooled broth over the ingredients.
  12. 12. Cover the bowl and let the bites marinate for 24 hours in a cool place.
  13. 13. Serve the matjes bites with boiled potatoes.
