  1. 1. Whisk sour cream, crème fraîche, yogurt, and mustard in a bowl until the mixture is smooth and homogeneous.
  2. 2. Season the cream with salt and pepper to your taste.
  3. 3. Rinse the fresh herbs under running water.
  4. 4. Shake the herbs dry to remove excess water.
  5. 5. Pluck the leaves from the stems if necessary.
  6. 6. Chop the herbs very finely.
  7. 7. Fold the chopped herbs into the prepared sour cream mixture.
  8. 8. Take two Matjes fillets each.
  9. 9. Generously coat the fillets with the herb yogurt sour cream.
  10. 10. Arrange the topped fillets on plates.
  11. 11. Serve the dish with hearty whole grain bread.
