🍽️ Matjes fillets with fresh herb yogurt cream

Ingredients
- 150 g sour cream
- 100 g firm sour cream
- 100 g whole milk yogurt
- 1 tsp mild Dijon mustard
- salt
- pepper from the mill
- 1 bunch fresh mixed herbs (e.g. parsley, dill, cress, lemon balm, chives)
- 4 double matjes fillets
Instructions
- 1. Whisk sour cream, crème fraîche, yogurt, and mustard in a bowl until the mixture is smooth and homogeneous.
- 2. Season the cream with salt and pepper to your taste.
- 3. Rinse the fresh herbs under running water.
- 4. Shake the herbs dry to remove excess water.
- 5. Pluck the leaves from the stems if necessary.
- 6. Chop the herbs very finely.
- 7. Fold the chopped herbs into the prepared sour cream mixture.
- 8. Take two Matjes fillets each.
- 9. Generously coat the fillets with the herb yogurt sour cream.
- 10. Arrange the topped fillets on plates.
- 11. Serve the dish with hearty whole grain bread.
