🍽️ Matjes with Potatoes and Bacon Dip

Ingredients
- 800 g Boiled potatoes
- 8 Matjes fillets
- 1 Apple
- 2 Onions
- 200 g Bacon cubes
- 2 tbsp Vegetable oil
- 2 tbsp Flour
- 4 tbsp Sour cream
- chopped Parsley
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes for about 30 minutes until they are cooked through.
- 3. Rinse the matjes (pickled herring fillets) under cold water.
- 4. Pat the matjes dry with a kitchen towel.
- 5. Wash the apple.
- 6. Cut the apple into four quarters.
- 7. Remove the core from the apple quarters.
- 8. Cut the apple quarters into thin wedges.
- 9. Peel both onions.
- 10. Slice one of the onions into rings.
- 11. Finely dice the second onion.
- 12. Heat oil in a frying pan.
- 13. Fry the bacon in the hot oil.
- 14. Add the finely diced onions to the pan.
- 15. Fry the mixture until lightly golden brown.
- 16. Dust the mixture with flour.
- 17. Allow the mixture to turn slightly brown.
- 18. Deglaze the pan with about 200 milliliters of water.
- 19. Let the sauce reduce until slightly creamy.
- 20. Season the sauce with pepper.
- 21. Roughly chop the parsley.
- 22. Stir the parsley into the sauce.
- 23. Remove the sauce from the heat.
- 24. Add the sour cream to the sauce.
- 25. Place the matjes fillets on the plates.
- 26. Add the apple pieces and onion rings to the plates.
- 27. Serve the sauce alongside.
- 28. Serve the boiled potatoes on the side.
