  2. 2. Steam the potatoes for about 30 minutes until they are cooked through.
  3. 3. Rinse the matjes (pickled herring fillets) under cold water.
  4. 4. Pat the matjes dry with a kitchen towel.
  5. 5. Wash the apple.
  6. 6. Cut the apple into four quarters.
  7. 7. Remove the core from the apple quarters.
  8. 8. Cut the apple quarters into thin wedges.
  9. 9. Peel both onions.
  10. 10. Slice one of the onions into rings.
  11. 11. Finely dice the second onion.
  12. 12. Heat oil in a frying pan.
  13. 13. Fry the bacon in the hot oil.
  14. 14. Add the finely diced onions to the pan.
  15. 15. Fry the mixture until lightly golden brown.
  16. 16. Dust the mixture with flour.
  17. 17. Allow the mixture to turn slightly brown.
  18. 18. Deglaze the pan with about 200 milliliters of water.
  19. 19. Let the sauce reduce until slightly creamy.
  20. 20. Season the sauce with pepper.
  21. 21. Roughly chop the parsley.
  22. 22. Stir the parsley into the sauce.
  23. 23. Remove the sauce from the heat.
  24. 24. Add the sour cream to the sauce.
  25. 25. Place the matjes fillets on the plates.
  26. 26. Add the apple pieces and onion rings to the plates.
  27. 27. Serve the sauce alongside.
  28. 28. Serve the boiled potatoes on the side.
