  2. 2. Peel the carrot and slice it into thin rounds.
  3. 3. Slice the gherkins into thin rounds as well.
  4. 4. Peel the apple and cut it into quarters.
  5. 5. Remove the core from the apple quarters.
  6. 6. Slice the fruit flesh into thin pieces.
  7. 7. Drizzle the apple slices with a little lemon juice to prevent them from browning.
  8. 8. Whip the cream until it is stiff and firm.
  9. 9. Mix the whipped cream with the yogurt.
  10. 10. Season the mixture with horseradish, salt, pepper, and lemon juice.
  11. 11. Place the prepared onions, carrots, and gherkins into a bowl.
  12. 12. Gently fold the yogurt-cream mixture into the vegetables.
  13. 13. Place the matjes fillets side by side in a shallow dish.
  14. 14. Spread the apple-vegetable-yogurt mixture evenly over the fillets.
  15. 15. Cover the dish and place it in the refrigerator for at least 2 hours to let the flavors meld.
