🍽️ Matjes fillets with creamy yogurt-apple crunch

Ingredients
- 2 onions
- 1 carrot
- 2 gherkins
- 1 tart apple
- lemon juice
- 200 g whipping cream
- 150 g yogurt
- 1 tsp horseradish (from the jar)
- salt
- pepper (from the mill)
- 8 matjes fillets
- 1 tbsp chive rings
Instructions
- 1. Peel the onions and slice them into very thin rings.
- 2. Peel the carrot and slice it into thin rounds.
- 3. Slice the gherkins into thin rounds as well.
- 4. Peel the apple and cut it into quarters.
- 5. Remove the core from the apple quarters.
- 6. Slice the fruit flesh into thin pieces.
- 7. Drizzle the apple slices with a little lemon juice to prevent them from browning.
- 8. Whip the cream until it is stiff and firm.
- 9. Mix the whipped cream with the yogurt.
- 10. Season the mixture with horseradish, salt, pepper, and lemon juice.
- 11. Place the prepared onions, carrots, and gherkins into a bowl.
- 12. Gently fold the yogurt-cream mixture into the vegetables.
- 13. Place the matjes fillets side by side in a shallow dish.
- 14. Spread the apple-vegetable-yogurt mixture evenly over the fillets.
- 15. Cover the dish and place it in the refrigerator for at least 2 hours to let the flavors meld.
- 16. Sprinkle the finished dish with fresh chives before serving.
- 17. Serve the matjes fillets with boiled potatoes or rustic bread.
