Ingredients
- 3 untreated oranges
- 1 tsp red peppercorns
- 6 juniper berries
- 1 tbsp green peppercorns (in brine)
- 0.5 tsp ginger powder
- salt
- white pepper
- 0.5 red bell pepper
- 1 spring onion
- 2 matjes fillets
Instructions
- 1. Wash two oranges under hot water and dry them.
- 2. Squeeze the juice from the two oranges.
- 3. Cut off the top and bottom of the third orange.
- 4. Divide the orange into four long quarters.
- 5. Slice the quarters into thin slices.
- 6. Add the orange slices to the juice.
- 7. Crush red peppercorns and juniper berries slightly with the back of a knife.
- 8. Stir the crushed spices into the orange juice.
- 9. Drain green peppercorns.
- 10. Add the green peppercorns to the mixture.
- 11. Stir in ginger powder.
- 12. Season the mixture with a little salt and white pepper.
- 13. Wash the pointed pepper.
- 14. Halve the pepper.
- 15. Remove the white membranes and seeds.
- 16. Cut the flesh into thin strips.
- 17. Wash the spring onion.
- 18. Remove the ends of the spring onion.
- 19. Slice the spring onion diagonally into thin rings.
- 20. Rinse the matjes fillets briefly.
- 21. Pat the matjes fillets dry.
- 22. Cut the matjes fillets diagonally into large pieces.
- 23. Add the pepper strips to the orange preparation.
- 24. Add the spring onion rings to the orange preparation.
- 25. Add the matjes fillets to the orange preparation.
- 26. Mix all ingredients well.
- 27. Cover the bowl.
- 28. Place the bowl in the refrigerator for about 30 minutes.
- 29. Distribute the salad onto four glasses.
- 30. Serve the salad.
