🍽️ Matjes with Horseradish Quark

Ingredients
- 750 g firm-boiling potatoes
- 1 tbsp caraway seeds
- salt
- 1 small onion
- 50 g horseradish (1 piece)
- 1 bunch chives
- 1 lemon
- 5 tbsp milk (1.5% fat)
- 500 g low-fat quark
- pepper
- 1 pinch sugar
- 3 tbsp rapeseed oil
- 1 bunch radishes
- 3 sprigs dill
- 2 tbsp white wine vinegar
- 600 g matjes fillets (double matjes; 8 matjes fillets)
- a little head lettuce (to taste)
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Put the potatoes into boiling salted water together with caraway seeds.
- 3. Cook the potatoes until tender for 20 to 25 minutes, depending on their size.
- 4. Peel the onion in the meantime.
- 5. Cut the onion into fine cubes.
- 6. Peel the horseradish.
- 7. Grate the horseradish finely.
- 8. Wash the chives.
- 9. Shake the chives dry.
- 10. Cut the chives into small rings.
- 11. Halve the lemon.
- 12. Squeeze the lemon.
- 13. Measure out 3 tablespoons of lemon juice.
- 14. Put the milk and quark into a bowl.
- 15. Add the lemon juice to the milk and quark.
- 16. Stir the mixture in the bowl.
- 17. Season the quark mixture with salt.
- 18. Season the quark mixture with pepper.
- 19. Add 1 pinch of sugar to the quark mixture.
- 20. Fold the diced onion into the quark.
- 21. Fold the cut chives into the quark.
- 22. Fold the grated horseradish into the quark.
- 23. Add 1 tablespoon of rapeseed oil to the quark mixture.
- 24. Stir everything well into the quark.
- 25. Clean the radishes.
- 26. Wash the radishes.
- 27. Slice the radishes.
- 28. Wash the dill.
- 29. Shake the dill dry.
- 30. Pluck the dill tips off.
- 31. Finely chop the dill.
- 32. Put vinegar into another bowl.
- 33. Add salt to the bowl with the vinegar.
- 34. Add pepper to the bowl with the vinegar.
- 35. Add the remaining oil to the bowl with the vinegar.
- 36. Stir the vinegar-onion mixture.
- 37. Add the dill to the vinegar-onion mixture.
- 38. Add the radish slices to the vinegar-onion mixture.
- 39. Fold the vinegar-onion mixture under the radishes.
- 40. Drain the potatoes.
- 41. Rinse the potatoes thoroughly under cold water.
- 42. Peel the cooled potatoes.
- 43. Put the potatoes on a plate.
- 44. Put the matjes fillets on the plate.
- 45. Put the quark on the plate.
- 46. Place lettuce leaves on a platter.
- 47. Put the radish salad on the lettuce leaves.
- 48. Serve the dish as desired.
