🍽️ Matjes Crab Omelette

Ingredients
- 6 Eggs
- 6 tbsp Milk
- Salt
- Pepper from the mill
- 1 tsp Tomato paste
- 2 tbsp Butter
- 1 box Garden cress
- 150 g North Sea crab meat
- 4 double Matjes fillets
- 4 large slices Rye mixed bread
- Cucumber
Instructions
- 1. Whisk the eggs, milk, salt, pepper, and tomato paste with a hand mixer until the mixture is creamy.
- 2. Heat the butter in a frying pan.
- 3. Pour the egg mixture into the pan and stir until it sets.
- 4. Rinse the cress and cut it from the stem.
- 5. Spread the scrambled eggs onto the 4 slices of bread.
- 6. Place 2 matjes fillets and crab meat on each slice.
- 7. Garnish the dish with cress and cucumber slices.
