Ingredients
- 2 small onions
- 2 small gherkins
- 2 tart apples
- 0.5 lemon
- 400 g yogurt (3.5% fat)
- salt
- pepper
- 400 g double matjes fillets (4 double matjes fillets)
- 0.5 bunch chives
Instructions
- 1. Peel the onions.
- 2. Cut the onions into thin strips.
- 3. Finely dice the gherkins.
- 4. Wash the apples.
- 5. Quarter the apples.
- 6. Remove the core from the apple quarters.
- 7. Slice the apple quarters thinly across the grain.
- 8. Squeeze the lemon.
- 9. Stir the yogurt with two teaspoons of lemon juice.
- 10. Season the yogurt mixture with salt and pepper.
- 11. Fold in the prepared onions, gherkins, and apples into the yogurt mixture.
- 12. Place the matjes fillets on a plate.
- 13. Spread the yogurt sauce over the matjes fillets.
- 14. Wash the chives.
- 15. Shake the chives dry.
- 16. Cut the chives into fine rings.
- 17. Sprinkle the chive rings over the matjes.
- 18. Serve the dish with whole grain bread.
