🍽️ Matjes Bruschetta with Egg and Tomatoes

Ingredients
- 6 Matjes fillets
- 2 shallots
- 1 apple
- 2 tbsp vegetable oil
- 2 tbsp capers
- 4 large slices whole grain baguette
- 4 tbsp butter
- 4 cocktail tomatoes
- 4 hard-boiled quail eggs
- 1 sprig dill
- salt
- pepper (from the mill)
Instructions
- 1. Finely chop the matjes herring.
- 2. Peel the shallots and chop them finely as well.
- 3. Peel the apple, remove the core, and dice the flesh into small cubes.
- 4. Mix the matjes, shallots, and apple cubes together in a bowl.
- 5. Season the mixture with salt and pepper to taste.
- 6. Stir the oil and capers into the tartare mixture.
- 7. Spread the butter evenly over the bread slices.
- 8. Spread the matjes tartare mixture onto the bread slices.
- 9. Wash the tomatoes thoroughly.
- 10. Cut the tomatoes in half or into quarters.
- 11. Peel the boiled eggs and cut them in half.
- 12. Garnish the bruschetta with the tomato pieces, egg halves, and fresh dill.
