🍽️ Crunchy Ciabatta Salad with Matjes and Mango

Ingredients
- 300 g cocktail tomatoes (stale)
- 1 shallot
- 80 ml olive oil
- 200 g ciabatta
- 200 g arugula
- 1 mango
- 4 matjes fillets
- 2 tbsp white balsamic vinegar
- 1 tbsp lemon juice
- 1 pinch sugar
- pepper (from the mill)
- 2 tbsp caper berries
Instructions
- 1. Switch the oven to the grill setting and preheat it.
- 2. Pour boiling water over the tomatoes, shock them immediately in cold water, and peel off the skin.
- 3. Peel the shallot and dice it finely.
- 4. Heat one tablespoon of oil in a pan and sauté the shallots until translucent.
- 5. Add the peeled tomatoes to the pan, toss them briefly in the oil, and remove the pan from the heat.
- 6. Slice the ciabatta bread into thin slices.
- 7. Drizzle the bread slices with olive oil.
- 8. Place the bread under the grill and bake it on both sides until golden brown.
- 9. Remove the bread and let it cool down slightly.
- 10. Wash the arugula, remove any tough stems, and let the greens drain well.
- 11. Peel the mango and cut the flesh into thin strips.
- 12. Cut the matjes herring into matching strips as well.
- 13. Whisk four tablespoons of olive oil with balsamic vinegar and lemon juice.
- 14. Season the dressing mixture with sugar, salt, and pepper to taste.
