  1. 1. Switch the oven to the grill setting and preheat it.
  2. 2. Pour boiling water over the tomatoes, shock them immediately in cold water, and peel off the skin.
  3. 3. Peel the shallot and dice it finely.
  4. 4. Heat one tablespoon of oil in a pan and sauté the shallots until translucent.
  5. 5. Add the peeled tomatoes to the pan, toss them briefly in the oil, and remove the pan from the heat.
  6. 6. Slice the ciabatta bread into thin slices.
  7. 7. Drizzle the bread slices with olive oil.
  8. 8. Place the bread under the grill and bake it on both sides until golden brown.
  9. 9. Remove the bread and let it cool down slightly.
  10. 10. Wash the arugula, remove any tough stems, and let the greens drain well.
  11. 11. Peel the mango and cut the flesh into thin strips.
  12. 12. Cut the matjes herring into matching strips as well.
  13. 13. Whisk four tablespoons of olive oil with balsamic vinegar and lemon juice.
  14. 14. Season the dressing mixture with sugar, salt, and pepper to taste.
