🍽️ Matjes Salad with Potatoes and Green Beans

Ingredients
- 250 g mostly waxy potatoes
- salt
- 500 g green beans
- 1 small radicchio
- 2 tbsp white wine vinegar
- 1 egg yolk
- salt
- pepper from the mill
- 4 tbsp oil
- 1 onion
- 1 thumb-sized piece horseradish root
- 8 matjes fillets
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Bring a pot of salted water to a boil.
- 3. Add the potatoes to the boiling water.
- 4. Cook the potatoes for about 20 minutes.
- 5. Rinse the green beans under running water.
- 6. Remove the hard ends and strings from the beans.
- 7. Cut the beans into bite-sized pieces.
- 8. Cook the beans in the salted water for 10 to 12 minutes.
- 9. Remove the outer leaves of the radicchio.
- 10. Cut the radicchio into small pieces.
- 11. Pour the vinegar into a bowl.
- 12. Add the egg yolk, salt, and pepper to the bowl.
- 13. Add the oil to the bowl.
- 14. Whisk the ingredients vigorously with a spoon.
- 15. Peel the onion.
- 16. Dice the onion into small cubes.
- 17. Peel the horseradish root.
- 18. Grate the horseradish finely using a grater.
- 19. Drain the cooking water from the beans.
- 20. Rinse the beans with cold water to cool them down.
- 21. Let the beans drain well.
- 22. Drain the cooking water from the potatoes.
- 23. Peel the warm potatoes.
- 24. Cut the potatoes into cubes.
- 25. Pour the marinade over the potato cubes.
- 26. Let the potatoes marinate for 30 minutes.
- 27. Set aside the beans and radicchio.
- 28. Rinse the matjes under cold water.
- 29. Pat the matjes dry with a kitchen towel.
- 30. Mix the beans and radicchio with the marinated potatoes.
- 31. Arrange the salad on plates.
- 32. Place the matjes on top of the salad.
