Ingredients
- 1 Shortcrust pastry (basic cookie dough recipe)
- 0.5 tsp Vanilla powder
- 2 tsp Zest of one organic lemon
- 2 level tsp Matcha tea powder (ground green tea)
- 80 g White chocolate
- 40 g Chopped pistachio kernels
Instructions
- 1. Prepare the cookie dough according to the provided base recipe.
- 2. Knead vanilla powder, lemon zest, and matcha powder thoroughly into the dough.
- 3. Roll out the dough flat.
- 4. Cut star shapes out of the dough.
- 5. Place the cookies on a baking sheet lined with baking paper.
- 6. Preheat the oven to 180 degrees Celsius (convection 160 degrees or gas level 2 to 3).
- 7. Bake the stars for about 10 to 12 minutes until golden brown.
- 8. Remove the cookies from the oven and let them cool down.
- 9. Chop the chocolate roughly.
- 10. Melt the chocolate over a bowl of hot water.
- 11. Dip half of each cookie into the melted chocolate.
- 12. Place the cookies on a wire rack.
- 13. Sprinkle the chocolate with pistachios.
- 14. Place the cookies in a cool place until the chocolate has hardened.
