🍰 Crunchy Matcha Coconut Cookies

Ingredients
- 100 g Coconut flakes
- 100 g Almond flour
- 1 tsp –2 tsp Matcha tea powder
- a pinch Vanilla powder
- 80 ml liquid honey
- 70 g Apple puree or alternatively apple sauce (unsweetened)
- 50 g liquid coconut oil
Instructions
- 1. Mix the coconut flakes, almond flour, and matcha powder in a bowl.
- 2. Add the vanilla powder, honey, apple puree, and coconut oil.
- 3. Knead everything into a uniform, slightly sticky dough.
- 4. Line a baking tray with baking paper.
- 5. Divide the dough into 15 equal portions.
- 6. Lightly wet your hands with water.
- 7. Shape each portion into a ball.
- 8. Gently press the balls flat on the tray.
- 9. Preheat the oven to 160 degrees (convection 140 degrees or gas level 1 to 2).
- 10. Bake the cookies for 10 to 15 minutes.
- 11. Let the cookies cool down completely on the tray.
