🍽️ Mascarpone cream with berries

Ingredients
- 500 g Mascarpone
- 2 tbsp Sugar
- 1 packet Vanilla Sugar
- 1 tbsp Raspberry Liqueur
- 40 g Pistachios
- 1 tbsp Powdered Sugar
- 200 g Raspberries
- 100 g Blackberries
- 100 g Red Currants
- 200 g Blueberries
- 200 g Strawberries
- 2 tbsp Red Currant Jelly
- 40 ml Red Currant Juice
- Oranges
Instructions
- 1. Whisk mascarpone, sugar, vanilla sugar, and liqueur until smooth and creamy. Chill the mixture. Slice the pistachios.
- 2. Remove the redcurrants from their stems. Wash all berries, remove any remaining stems, and pat them dry. Cut the strawberries into smaller pieces depending on their size.
- 3. Stir the redcurrant jelly until smooth with the redcurrant juice and orange juice. Pour this marinade over the berries, mix gently, and let it infuse for about 30 minutes.
- 4. Fill the mascarpone cream into four glasses. Serve with the berry salad and garnish with the sliced pistachios and a dusting of powdered sugar.
