🍰 Mascarpone Chocolate Dessert with Chestnuts

Ingredients
- 100 g dark chocolate (70 % cocoa)
- 100 g milk chocolate (40 % cocoa)
- 250 ml whipping cream (30 % fat)
- 30 g butter
- 10 ml rum (or cognac)
- 125 g chestnuts (pre-cooked and peeled)
- 75 ml whipping cream (min. 30 % fat)
- 1 pinch cinnamon
- 1 tbsp sugar (to taste)
- 120 g mascarpone
- 2 tbsp plain yogurt
- 1 packet vanilla sugar
- 1 tbsp lemon juice
- 4 dried apricots (cut into pieces)
Instructions
- 1. Break the chocolate pieces into two separate small bowls.
- 2. Heat half of the cream in a pot until it boils.
- 3. Pour the hot cream over the chocolate in one of the bowls.
- 4. Stir the mixture vigorously until the chocolate has completely melted.
- 5. Let the melted chocolate mixture cool down for about 3 hours.
- 6. Melt the butter in a small pot or in the microwave.
- 7. Let the melted butter cool down briefly until it is lukewarm.
- 8. Slowly stir the cooled dark chocolate mixture into the remaining chocolate cream.
- 9. Add some rum and mix it well into the cream.
- 10. Whip the remaining cold cream stiffly using a mixer.
- 11. Gently fold half of the stiffly whipped cream into the chocolate cream.
- 12. Keep the remaining half of the whipped cream in the refrigerator for decoration.
- 13. Finely chop the chestnuts (sweet chestnuts) with a knife.
- 14. Take one-third of the remaining cream and puree it together with the chestnuts until smooth.
- 15. Stir the sugar and cinnamon into the chestnut puree mixture.
- 16. Whip the remaining cream stiffly again if it has become soft.
- 17. Fold the stiffly whipped cream into the chestnut mixture.
- 18. Keep both creams cool until you are ready to serve them.
- 19. Mix all ingredients for the mascarpone cream in a separate bowl.
- 20. Keep the mascarpone cream cool as well.
- 21. Layer the different creams alternately into four glasses.
- 22. Decorate the desserts on top with a dollop of the reserved whipped cream.
- 23. Sprinkle pieces of dried apricots over them as desired.
