🍰 Creamy Mascarpone Raspberry Dessert with Roasted Almonds

Ingredients
- 60 g almond flakes
- 300 g mascarpone
- 200 g crème fraîche
- 150 g lemon curd
- 250 g raspberries
- liquid honey (to taste)
- 1 untreated lime
Instructions
- 1. Place the almonds in a dry pan.
- 2. Roast the almonds over medium heat until they are golden brown and fragrant.
- 3. Remove the almonds from the pan and let them cool completely.
- 4. Stir the mascarpone cheese vigorously with the crème fraîche.
- 5. Gently fold in the lemon curd into the mascarpone mixture just briefly.
- 6. Leave small bits of lemon curd visible; do not mix it in completely.
- 7. Distribute the mascarpone-lemon mixture evenly to the bottom of 10 small shot glasses.
- 8. Sort through the raspberries for any bad ones and wash them thoroughly.
- 9. Gently pat the raspberries dry with kitchen paper.
- 10. Place the raspberries in a bowl.
- 11. Mash the raspberries roughly with a fork.
- 12. Sweeten the raspberry mash to taste with honey.
- 13. Place the sweetened raspberry mixture on top of the cream in the glasses.
- 14. Sprinkle the cooled roasted almonds over the raspberries.
- 15. Cut the lime into very thin wedges.
- 16. Garnish the finished dessert glasses with the lime wedges.
