🍰 Apricot Mascarpone Tarts with Butter Cookie Crust

Ingredients
- 150 g apricots (can)
- 150 g butter cookies
- 150 g mascarpone
- 150 g low-fat quark
- 150 ml whipping cream
- 0.5 vanilla pod (seeds)
- 5 tbsp powdered sugar
- 1 tbsp lemon juice
Instructions
- 1. Open the can of apricots and pour the syrup into a small bowl.
- 2. Place the apricots into a blender.
- 3. Blend the fruit until smooth.
- 4. Add a little of the reserved syrup if you want a thinner consistency.
- 5. Put the butter cookies into a resealable plastic bag.
- 6. Crush the cookies into fine crumbs using a rolling pin.
- 7. Whisk the mascarpone, quark, vanilla seeds, powdered sugar, and lemon juice together in a bowl.
- 8. Whip the cream in a separate bowl until stiff peaks form.
- 9. Gently fold the whipped cream into the mascarpone mixture.
- 10. Spread two-thirds of the cookie crumbs onto the bottom of the dessert bowls.
- 11. Spoon the mascarpone cream evenly over the cookie crumbs.
- 12. Gently swirl the apricot puree into the cream.
- 13. Sprinkle the remaining cookie crumbs over the top.
- 14. Serve the dessert immediately.
