  1. 1. Open the can of apricots and pour the syrup into a small bowl.
  2. 2. Place the apricots into a blender.
  3. 3. Blend the fruit until smooth.
  4. 4. Add a little of the reserved syrup if you want a thinner consistency.
  5. 5. Put the butter cookies into a resealable plastic bag.
  6. 6. Crush the cookies into fine crumbs using a rolling pin.
  7. 7. Whisk the mascarpone, quark, vanilla seeds, powdered sugar, and lemon juice together in a bowl.
  8. 8. Whip the cream in a separate bowl until stiff peaks form.
  9. 9. Gently fold the whipped cream into the mascarpone mixture.
  10. 10. Spread two-thirds of the cookie crumbs onto the bottom of the dessert bowls.
  11. 11. Spoon the mascarpone cream evenly over the cookie crumbs.
  12. 12. Gently swirl the apricot puree into the cream.
  13. 13. Sprinkle the remaining cookie crumbs over the top.
  14. 14. Serve the dessert immediately.
