🍰 Marzipan Cream Dream with Raspberries and Mint

Ingredients
- 500 g fresh raspberries
- 1 tbsp lemon juice
- 3 tbsp powdered sugar
- 20 ml raspberry liqueur
- 75 g marzipan raw mass
- 250 g mascarpone
- 150 g natural yogurt
- 75 g sugar
- 150 g whipping cream (at least 30% fat content)
- mint (for garnish)
Instructions
- 1. Remove the stems from the raspberries and wash them thoroughly.
- 2. Let the raspberries drain well in a sieve.
- 3. Place the raspberries, lemon juice, powdered sugar, and liqueur into a blender.
- 4. Blend the mixture until it forms a smooth, fine puree.
- 5. Set the raspberry sauce aside in a cool place.
- 6. Grate the marzipan very finely using a grater.
- 7. Stir the grated marzipan in a bowl with the mascarpone, yogurt, and sugar.
- 8. Whip the cream in a separate bowl until stiff.
- 9. Gently fold the whipped cream into the marzipan-mascarpone mixture.
- 10. Spoon a layer of the marzipan-cream mixture into each dessert glass.
- 11. Add a spoonful of the raspberry sauce over the cream.
- 12. Repeat the layers until the glasses are filled, starting and ending with the cream.
- 13. Use the tip of a fork to drag through the layers to create a marbled effect.
- 14. Garnish the desserts with fresh mint leaves.
- 15. Serve the marzipan cream immediately.
